Almond Milk Eggnog
December 01, 2022Just as delicious as old-fashioned eggnog, this dairy-free eggnog recipe will tempt your taste buds all holiday season long. Celebrate National Eggnog Month with a cup or two!
Ingredients
- 6 egg yolks
- ½ cup sugar
- 6 cups unsweetened almond milk, divided
- ½ teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 2 teaspoon vanilla extract
- Dash of rum, bourbon, or rum flavoring (optional)
Directions
- In a medium saucepan, whisk together the egg yolks and sugar until well combined.
- Add in 3 cups of almond milk and whisk until combined.
- Place saucepan on a stove burner at low heat, and continually stir until a thermometer in the mixture reads 180°F.
- Remove from heat and stir in the remaining almond milk.
- Add in the nutmeg, cinnamon, vanilla extract, and whisk together until well combined.
- Cover and store in the refrigerator for at least 2-3 hours to chill.
- Once cooled, stir well or place in a blender to mix all ingredients.
- Serve in individual cups, and flavor with dash of rum, bourbon, or rum flavoring, if desired.
